Roman Meal Low-Carb Bread

I have discovered low-carb bread that I like! It is made by Roman Meal and called carb aware. It is 7g carbs with 2g fiber, making it net 5 carbs per slice. It is good enough to eat with peanut butter, and it is helping me to keep my carb count up while on maintenance.

Maintenance

Things have been going pretty good. I've been bouncing around the same few pounds, though. I went on maintenance because I felt it was better while trying to conceive to already be on maintenance. I'm making sure to eat plenty of fruits and veggies with complex carbs. Also taking pre-natal vitamins.

Wedding Rehearsal and Dinner

My step-daughter is getting married today. The wedding rehearsal went well yesterday. She is getting married at someone's home on the river. The view is absolutely beautiful, and they will be getting married under a huge oak tree. We are concerned about the weather as it will rain today. They are saying the showers will be scattered in the afternoon, then they'll be everywhere this evening. I hope they just scatter away! The wedding is at 2:30, and the ceremony will not be very long.

The rehearsal dinner was at Bennigan's. I had their smothered chicken sans mushrooms. It was great! I still have some to eat that I brought home. I asked for a salad and no sides, but they put mashed potatoes on my plate anyway. I had them bring me another plate so I could just put the chicken on it. The salad was good!

I hope everything goes well for step-daughter. She is at her ropes end right now.

Crabs

I forgot how much I love crab legs! We went to Whitey's Fish Camp last night and I ordered crab legs. They are the absolute best!!! Whatever they had that they called butter, though, I have no clue what it was. I asked the waitress and she said it comes in a tub already melted. I felt sure there were trans-fats in it, so I just gave it back to her.

We went out to dinner with DH's ex-sister-in-law, her husband, three kids, and oldest kids boyfriend. They are in town for step-daughter's wedding. They were all nice and I really enjoyed their company.

Apples and Peanut Butter

I found a new food combination: apples and peanut butter! I have had this a couple of times this year and really like it a lot. I use my home made peanut butter so there are no trans-fats to deal with. Yum!

Flax Bun

Last night I made sloppy joes. I wanted to eat them on bread, but I have not had good luck with low carb bread. I decided to make a flax bun, and it was fantastic! This is the recipe I used:

2 tbsp butter
1/4 cup flaxmeal (also known as linseed meal)
1 egg
pinch of salt
1 tsp baking powder

I melted the butter in the microwave, then added the flax meal and salt. I beat in the egg, then last beat in the baking powder. I put the whole thing in a dixie microwave safe bowl and microwaved for one minute. I let it sit for one more minute, then took out and cut in half. I eat sloppy joes open faced, so I put some meat on each half of the bun.

It was great! And flax is so good for you. Plenty of fiber and omega 3's. I'm going to do this again soon.

Maintaining

I have been maintaining my weight, which is good. I launched a new web site today: http://www.babytalkzone.com. I really hope it does well. I was going to get more info on it before launching, but since today is my fourth anniversary of quitting smoking (Yes!), I decided to just go for it. I started a Google AdWords campaign to see if it can bring much traffic to my site to get it started going.
